Vineyard

The vineyard "Poggio della Costa" is in the commune of Civitella d'Agliano, covers a surface of 7 hectares, facing east at an altitude of 140 m. Clay soil
of medium consistency.

Vinification

Soft pressing, preventive purifying of must at low temperature, deliberately
slow fermentation at controlled temperature (18/20° C.) for 15/25 days.

Maturation

In stainless steel tanks on own lees until the end March.

Refining

Depending in harvests, it is bottled March/April.

Longevity

Respond well to a few years' ageing.

Colour

Rich golden yellow.

Aroma and flavour

During first month there are flavours of flowers and exotic fruits (pineapple). In late summer a pleasing aromatic bouquet, full and fruity, perfectly blending taste and smell.

Serving temperature

10° - 12° C.

Suggested accompaniments

Goes well with savoury dishes such as lasagne, spaghetti "alla carbonara" and "amatriciana", beans and cheek-pea soup; and of course fish dishes.

Alcohol 13.5%, acidity 5.20 g/l, dry extract 19.1 g/l
